  23. Today's Recipe: Big Red Soda Cake

  26. This recipe is a picnic classic. You can make it a day in
  27. advance and just keep it in the refrigerator until you're
  28. ready to eat. Then watch it disappear!
  29.

  31. Ingredients:
  32.  
  33. 2 cups flour
  34. 1 1/2 cups sugar
  35. 3 1/2 tsp. baking powder
  36. 1 tsp. salt
  37. 1/4 cup butter, softened
  38. 1/4 cup shortening
  39. 1 cup milk
  40. 1 1/2 tsp. vanilla extract
  41. 3 eggs
  42. 1 can Big Red Soda*
  43. 1 {3oz} box strawberry gelatin
  44. 1 {3oz} box vanilla instant pudding
  45. 1 {9oz} container whipped topping
  46.  
  47. * Any kind of strawberry soda would work
  48.  
  49.  
  50. Directions:
  51.  
  52. Preheat the oven to 350 degrees.
  53.  
  54. Place first 9 ingredients into a large mixing bowl. Beat on 
  55. low speed until well combined. Beat on high speed for 
  56. approximately 3 minutes. 
  57.  
  58. Bake at 350 degrees, for 40 to 45 minutes, in a greased and 
  59. floured 9" x 13" cake pan.
  60.  
  61. Remove the cake from oven. Poke holes throughout the cake 
  62. with the handle end of a wooden spoon. Mix package of gelatin
  63. with Big Red Soda and pour over hot cake. Refrigerate.
  64.  
  65. Prepare vanilla pudding, using ONLY 1 cup of milk. Mix with
  66. whipped topping; spoon over cooled cake. Keep refrigerated 
  67. and covered.
